Perfect with White Potatoes
Also Great With Yellow Potatoes
Method: Stove & Oven
Cooking Time: 10 minutes
- 10 white small potatoes
- 1/3 cup chopped flat leaf parsley
- 1/2 tbsp olive oil
- Salt & pepper
- Leaving skin on, prick potato both sides with a fork and place in microwave on High for 6 minutes. At 3 minutes, turn potatoes over and cook for further 2 minutes on High.
- Combine parsley, oil salt & pepper in a microwave safe dish and place in microwave with potatoes for remaining 1 minute on High.
- Remove potatoes and carefully toss the potato through the herb seasoning and serve.
